Gajak Recipe

This is the fundamental method for creating Gajak, a traditional Indian dessert made with sesame seeds (til). The amounts can be changed to suit your tastes; this recipe is for a conventional version.

Ingredients list:

cup of sesame seeds (till)
one cup chopped or grated jaggery (gur).
Two tsp ghee, or clarified butter
1/2 tsp powdered cardamom (optional)

Sesame Seeds, Dry Roasted:

Over medium heat, preheat a pan.
Dry roast the sesame seeds in the pan until they turn golden brown and give off a nutty scent. Keep stirring to achieve even roasting. After completed, put aside.

Make the jaggery syrup.

Put the ghee in the same pan and let it melt.
Add grated or chopped jaggery to the melted ghee.
Stir the jaggery constantly until it melts and turns into a syrup. By placing a tiny quantity of syrup into a bowl of water, you can determine the consistency. It ought to firmly ball up.

Mix jaggery syrup with sesame seeds:

Stir in the roasted sesame seeds when the jaggery syrup is done.
Blend thoroughly, making sure that the jaggery syrup coats every sesame seed.
